These beads hold soy sauce, encapsulated so that they only burst when you bite. Unlike a liquid condiment they do not run across the plate or dilute anything: the flavour arrives concentrated, exactly where you place it. On sashimi, on tartare, or over steamed vegetables. Keep refrigerated after opening.
