These beads hold yuzu, encapsulated so that they only burst when you bite. Unlike a liquid condiment they do not run across the plate or dilute anything: the flavour arrives concentrated, exactly where you place it. On raw fish, on shellfish, or over a fresh salad. Keep refrigerated after opening.
