This pesto is 36% basil, with Parmigiano Reggiano PDO and summer truffle stirred through. The truffle takes the place of the garlic: less sharp, more earthy, and considerably more luxurious. Stir it through fresh pasta off the heat, or spread thinly on toasted bread.
