This jelly is made from Aceto Balsamico di Modena IGP, set firm enough to slice. The idea comes from the restaurant kitchen: where liquid balsamic runs away, a jelly stays put and releases its flavour more slowly. Cut a thin slice onto a piece of Parmesan, onto pecorino, or beside a slice of roast meat.
