There is a particular rhythm to harvest season at Tenuta Venterra. For two months each year, the entire estate moves to the pace of the olives. Then, the land and olive trees take center stage again, entering a season of care and renewal.
Set on the windward slopes of Puglia, the estate takes its name from the breeze that moves through the land. The groves are farmed organically, but it is what happens once the olives leave the trees that defines the oil.
The clock starts the moment they are picked.
Throughout October and November, each day's harvest is gathered, carried from the grove and brought to the mill before the day is over. Not the following morning, not when it is convenient. Within hours, the olives are transformed into oil, while their freshness, aromas and natural character are still at their peak.
For weeks, this becomes the rhythm of the estate: harvest, transport, milling, and then start again the next morning. It is a demanding way to work, but one built around a simple belief: when the fruit is at its best, that is the moment to capture it.
The estate's olives are harvested and milled separately by variety, allowing each to reveal its own personality. Some are bold and peppery, others softer and more delicate. Together, they tell the story of the same land through different sensory expressions.
Then, almost as quickly as it began, harvest is over. The trees rest. The hills become quiet again. And the work of another season is safely gathered into a bottle.
