On the Adriatic coast of Puglia, in the town of Molfetta, the Ciccolella family has been caring for its olive groves for over four generations. Their farm stretches across the northern Bari countryside, with around 8,000 olive trees of Coratina and Ogliarola Barese, two native varieties deeply rooted in this land. Some of the trees have stood here for centuries, their roots holding stories that reach far beyond the family itself.
For Ciccolella, the quality of the oil begins long before it reaches the bottle. Careful irrigation helps protect the trees and fruit through the dry Apulian summers, while experience in the olive grove determines the right moment to harvest. The olives are picked when they reach the ideal stage of ripeness, as their colour begins to shift from green towards purple. This is when their fresh, fruity character is at its best.
From there, there is no time to waste. The olives reach the mill in less than six hours after picking, where they are immediately processed to prevent fermentation and preserve their freshness. They are carefully cleaned, crushed and ground, then worked at a closely controlled temperature. Ciccolella extracts its oil at just 22–23°C, well below the legal limit for cold extraction, helping preserve its aromas and natural qualities.
The freshly extracted oil is then filtered and stored in stainless steel silos under nitrogen and at a constant temperature, protecting it from oxygen, light and unwanted changes in temperature. And there is one final detail we particularly love: Ciccolella only bottles the oil when an order is received, so every bottle leaves the farm as fresh as possible.
It is a craft built on attention. Attention to the trees, to the fruit, to the moment, and to everything that happens in between. Nothing is rushed, and very little is left to chance.
The family even offers the possibility of adopting one of its olive trees, following its harvest and receiving the oil it produces. A small gesture that reveals something much bigger: the deeply personal relationship between the family, its trees and the land.
Ciccolella’s oils are made to bring that connection to the table. A final flourish, a fragrant pour, a little green-gold brightness over a dish. The kind of ingredient that quietly changes everything.
From the Apulian coast to your kitchen, a little piece of the Mediterranean at its best.
